It's easier than you think.
♪♪ ♪♪ Today we're making some super simple noodle dough that you can use to make a number of different noodles.
To start, dump one cup of flour on your board.
For flour, we are using all-purpose because it is easy to find and many of you already have it at home.
♪♪ Make a well in the center.
Make it larger than you think.
You'll use this to hold the next few ingredients and to mix everything together.
Add salt and 2 eggs to the well.
♪♪ Gently whisk in the egg and flour.
Work your way around, slowly incorporating the flour in.
♪♪ As it starts to become a thick mixture, start working the mixture with your hands.
It should have a shaggy appearance.
If the mixture is wet and sticky, add a small amount of flour.
If it is dry, add a small amount of water.
Knead the dough, working the outside into the middle for at least 10 minutes.
We are trying to get the outside dough pushed into the middle.
Lift and roll the dough.
You are folding and rolling over and over and over.
When it is ready, the ball will be smooth.
You'll be able to poke it and it will bounce back.
Wrap the dough and let it rest at room temperature for at least 30 minutes.
Flour your surface.
Unwrap and split the dough into smaller pieces to make it easier to work with.
This is your basic dough.
From here you can make it into so many different types of noodles.
We are going to make some simple flat noodles.
For the noodles we're making, we'll roll our dough into a large rectangle.
Turn the dough sideways and fold it into thirds.
Continue to roll out the dough.
♪♪ When the dough is thin enough you can see your skin color through, they're ready to cut.
Gently fold dough into thirds and cut to width.
♪♪ Fluff out strands and dust with flour to prevent sticking.
♪♪ At this point, you can boil the noodles or freeze them.
There are a ton of variations you can do.
